I always enjoy and a little snack to munch on while working to keep my brain functioning or maybe to just procrastinate a little longer, who knows but coconut meat has been my go to lately! Being from Florida, palm trees are nothing new to me, but palm trees with coconuts are! Coconut palm trees are all around Miami and at almost every farmers market there are coconuts sold. Most of us only think of the coconut juice and not so much of the meat, but don’t miss out on that yummy nutritious part of the coconut! Coconut meat has become one of my favorite snacks to munch on or shred and add to my salads. Coconut meat has a fresh, nutty, & lightly sweet flavor. It is high is fiber, one cup of coconut meat contains about 7.0 g of fiber. Coconut meat contains good fat, what the heck is good fat you may ask, well… Coconut meat is made up of medium chain triglycerides, which compared to long chain triglycerides are easier for our body to break down and don’t contribute to high cholesterol. It is also a great source of vitamin E, C, and electrolytes. Yup electrolytes, that is why coconut water is a much better choice than gatorade to gain those electrolytes back after a twerk out!
