I am obsessed with these almond & cashew squares and talk about easy! They are chewy, nutty, and have just the right amount of sweetness! The best part is they are made with only 6 ingredients, you will need a food processor or blender for this recipe. I do recommend to get a food processor if you don’t have one already, it is a tool needed in a healthy kitchen and makes things very simple, I think Walmart has them for $30 right now! I chose to make squares but the size is totally up to you, you can make bars, or you can use the mixture as a crust to a pie, cake, etc. I always test my recipes out with Savva because well, the faces he makes tells me everything I need to know haha. He devoured these guys and only left me one, so my almond & cashew squares are Savva approved!
Cashews have become one of my favorite nuts, they are creamy, slightly sweet, and are extremely versatile. They can be used in raw goods like above, baked goods, salad dressings, and added in sauces to make them thicker- great alternative to dairy free recipes. “Nature’s vitamin pill” is what cashews are often referred to, they contain heart-healthy fats, fibers, and plant-based protein. A little secret about these marvelous nuts is that they are high in tryptophan, which turns into serotonin and contributes to you feeling happy! Adding cashews to your diet frequently can help control anxiety, depression & migraines. According to Dr. Andrew Saul, a therapeutic nutritionist and editor-in-chief of Orthomolecular Medicine News Service, “Several handfuls of cashews provide 1,000-2,000 milligrams of tryptophan, which will work as well as prescription antidepressants.”
Always remember my recipes are here for inspiration, so if you would like to use other types of nuts, add dried fruit, or chocolate chips that is up to you! Just remember the ratio of nuts to date when substituting, which is below in the ingredients list- about two half cups of nuts to 1 cup of dates.

Cook Time: Refrigerate for about 30 mins
Total Time: 40 minutes
I cup medjool dates, pitted
1/2 cup almonds
1/2 cup cashews
1 tbsp almond butter
1 tbsp honey (optional)
1 tsp himalayan pink salt/sea salt (optional)
In the bowl of your food processor, mix together the nuts and the dates. Process until the pieces are all chopped up and a sticky dough has formed. Add the honey & almond butter and process until combined. Line a sheet pan with parchment paper and flatten down the dough out onto it. Shape the dough into one large rectangular brick and refrigerate until firm, about 30 minutes. Slice the bar into desired shapes. These almond & cashew squares can be kept in the refrigerator, in an airtight container for a few weeks.
