If you don’t already know, I am greek and I loveeee me some greek food but it isn’t always the healthiest choice haha. Tzatziki is a greek sauce usually served with gyros, grilled meats, or pita bread, some make it with sour cream and others make it with greek yogurt. We are going to use organic greek yogurt, lemon, garlic, salt, pepper, cucumber & olive oil. This sauce is super simple to make, made from staple ingredients, and gives any meal a rich, fresh, hearty flavor. I use it as a dip for vegetables, as a spread on top of bean burgers, sandwiches and wraps, or the perfect pair to some stuffed collard greens!
I am obsessed with these almond & cashew squares and talk about easy! They are chewy, nutty, and have just the right amount of sweetness! The best part is they are made with only 6 ingredients, you will need a food processor or blender for this recipe.
Oh man what a day and yes I did eat all three, Savva wasn’t home so I mean… they couldn’t go to waste! Lentils, black beans, edamame, quinoa, beets, garlic, sweet potatoes, avocado, tomatoes the list of veggies continues. I really love veggie burgers for that reason, it’s just a big sandwich full of vegetables that is savory, full of different textures, and has so many different variations. Pair one of these bad boys with sweet potatoes fries and maybe a side of massaged kale ceasar salad and oh man you’re set!
I always enjoy and a little snack to munch on while working to keep my brain functioning or maybe to just procrastinate a little longer, who knows but coconut meat has been my go to lately! Being from Florida, palm trees are nothing new to me, but palm trees with coconuts are! Coconut palm trees are all around Miami and at almost every farmers market there are coconuts sold.
After taking a trip down to Coconut Groves Organic Farmers Market on this beautiful Saturday I was tempted to make something yummy, sweet, and mini. I always have random cravings for key lime pie so that’s what I decided on for our first Saturday Sweet Tooth post! I love making mini versions rather than whipping together a whole pie because they are easier to grab for a quick bite and the perfect portion to curb those cravings.
